Amma Sambhar

Amma Sambhar

This is not Amma Sambaar that we mean everything in Tamil nadu.. This is my amma sambar which I will say no other sambar can beat the taste of my amma sambar.. Like others, I don't know cooking during my teenage days.. I tried sambar recipies from cooking books & from TV Programmes,, etc etc. But the authentic sambar which my mother makes is always appreciated by others. So, I noted down the recipie in my cooking diary with the title "Amma Sambar".


Ingredients:-
Toor Dal - 1 Cup
Fenugreek Seeds - 1/2 Teaspoon
Asafoetida - 1/4 Teaspoon
Mustard Seeds - 1/2 Teaspoon
Curry Leaves - 15 Curry Leaves
Drumstick - 1 cup
Small Onion - 5
Coriander Leaves - bunch of chopped leaves
Green Chillies - 2
Ladys Finger - One cup
Tomato - 1 Large size
Tamarind - 1/2 Lime Sized
Turmeric Powder - 1/4 Teaspoon
Sambar Powder - 2 Teaspoons Powder
Chilli Powder - 1/4 Teaspoon Powder
Salt - 2 1/2 Teaspoon
Oil - 2 Teaspoon

To Grind:-
Garlic – 1
Small Onion -3
Cumin Seeds – 1 Teaspoon
Coconut – 4 tsp of Grated Coconut or 1 chill coconut as we say

Method :- 
Soak the tamarind for half an hour in 2 cups of warm water. Take 1 cup of Tamarind juice from this. Cut the tomato and drumstick in to small pieces.
Add Chilli Powder, Sambar Powder, Turmeric Powder, Asafoetida, Salt, Drumstick & Tomato to the tamarind extract  and keep aside.
Now Clean the dal.  Add 2 cups of water to the dal in  a cooker. Leave it to 6 to 7 Whistles. Now mash it well and keep aside.
In a separate pan, heat oil. Once the oil is hot, add the green chillies, Ladies finger,  mustard seeds, curry leaves, fenugreek and saute it for 2 minutes. Add the 5 small onions, saute it. Pour the tamarind extract and let it boil. When it is boiling well, add dal to the mixture. Allo this to boil for 5 minutes.
Grind the given ingredients in mixie jar and add it to the sambar at the final stage.  Now add this coconut mixture to the sambar and remove it from heat. Garnish with chopped coriander leaves and Serve it..
